“…Inti is a tribute to one of nature’s quiet guardians — the golden-web spider, which inhabits over 80% of our crops. Its shimmering silk inspired the name and reflects the luminous hue of this unique coffee during its drying phase.
This Golden Honey processed lot captures both the intensity of the sun and the delicacy of detail. After pulping, the coffee is not washed but transferred directly — with its sticky mucilage — to raised beds in our drying room. Here, it slowly dehydrates for 20 to 22 days, during which it requires constant, attentive movement to avoid over-fermentation and to ensure even drying.
The result is a microlot with striking sweetness and depth, thanks in part to careful control of harvest-time irrigation, which naturally influences honey content and brix levels. Once the coffee reaches 11%–12% moisture, it is rested for several weeks before milling, allowing flavors and aromas to mature.
