About this coffee:
This lot was grown in the Jagong Jeget sub-district of Central Aceh on the island of Sumatra, between 1400 and 1600 meters above sea level. Most coffee in this region is produced by smallholding producers - this lot is named after the Gayo ethnic group. The nutrient-rich black humus soils and a cool mountain climate support slow cherry growth and great cup quality.
This coffee underwent the Honey process, which begins with the careful handpicking of ripe cherries. After harvesting, the cherries are pulped without fermentation, leaving part of the mucilage on the parchment. The coffee is then laid out to dry on raised beds under partial shade or on elevated patios, where it dries slowly over 10 to 14 days, depending on weather conditions. During this time, coffee is turned frequently to ensure even drying and to prevent unwanted fermentation.
Before export, the coffee undergoes a meticulous Triple Pick sorting process, where beans are hand-selected three separate times to remove defects and ensure exceptional consistency. This additional quality control results in a cleaner, more uniform lot while preserving the distinctive character of Gayo coffee.
